If it's coarse ground, mix it into some ground meat; if you can choose
from a variety of tripe blends, choose a different one. If you are
feeding tripe in sheets, try making access easier for her. Try lamb
tripe instead of beef (or vice versa). Try drizzling tuna juice or
liver juice over it (assuming of course she likes liver).
If she can't stand tripe now, give it up for several months then try
again.
She has a problem with being gassy and I suspect

I've never seen tripe to address gassiness but that doesnt' mean it
won't help hers.
