Normally, cattle are sold at a fixed price per lb hanging weight.
(This is right after they are butchered and cut in half to hang & age
for a couple of weeks.) You then tell them how you want the meat cut
(steaks, roasts, burger, etc.) and you should be able to keep every
part that you want as you've paid for it. Cutting/wrapping/freezing
will also be at a fixed price, normally under $1.00 lb. The hanging wt
price is what you pay the person who raised the animal and the cutting
price goes to the butcher. Pigs are sold the same way here.
