[rawfeeding] Another newbie needs help

HI all: I have a 3 year old beardie that has had pretty serious digestive issues. Finally solved it for a time with mixture of EVO RM and homemade cooked food, along with supplements and pancreatic enyzme. (his pancreatic tests came back low normal)
We have been doing fine and he has gained and maintained his weight but has now decided not to eat anything if it has any of the EVO RM kibble in it. In reading through posts on dogs with pancreatic / digestive issues - it seems feeding raw is helpful.
But through trial and error - I think he has problems with chicken and grains. Most of what I have read has you start out with chicken. If I can't do that - what meats would be best?
I have lots more reading to do but I figured now is the time.
