[rawfeeding] How much fat?

How much fat is too much? I have some lovely big
picnic pork (shoulders?) that I planned to cut in half
for the dogs. The pieces would be about 4 lbs. each.
My concern is what appears to be quite a large amount
of thick fat around the pork and a "caul" of what must
be pig skin..boy, is it tough..around the meat.
Should I trim off the thickest fat? If I feed this
large hunk of pork as is, will it be too much fat at
one time? The dogs just got over diarrhea and I don't
want it to start up again. Thanks for advice!
