I think your safest solution is to feed him the amount appropriate to
the weight you want him to be. Since amount fed also takes into
consideration age, health and activity level, you have room to
experiment in. Two per cent a day? One and a half? As long as you
are giving him a healthy variety of meat, meaty bones and organs, a
smaller amount will not necessarily short him nutritionally.

Or you could just assemble what you think what a meal ought to be,
then remove some of it. And use changes (or lack thereof) in his
physical appearance as your guide.

And of course you should be strict about treats and even stricter
about horning in on anyone else's food.

When my dogs--and cat--are looking fleshier than I'd prefer, I feed
the same menu, just less of it. With the dogs I'm likely to add
another "fast" day to their itinerary; for the cat though I just
offer smaller meals. I usually see an appropriate change in week or
two. A seriously overweight but otherwise healthy dog might need as
many as three months to shape up. A chubster with health issues may
have to lose even more slowly.
